- Gol Guppay
1 cup White Flour (Maida)
1/2 cup Sooji (Semolina)
- Gol Guppay Pani
1/2 tsp. Red chili (Lal Mirch)-powder
1/2 bunch Fresh Mint (Podina)-leaves
1 tsp. Cumin Seeds (Zeera)
1/2 tsp. Salt (adjust to taste)
1 pinch Black Salt (Kala Namak)
2 cup Water
3 Green Chilies
1/4 tsp. Ginger-paste
1 tbs. Tamarind (Imli)-paste
1/2 tsp. Carom Seeds (Ajwain)
Directions
- Mix the white flour and sooji and kneed into a hard dough and flatten into a very thin sheet.
- Cut into 2″ diameter circles with a cookie cutter.
- Deep fry until golden.
- Grind together all the ingredients for the dip and strain. Keep the liquid that strains through.
- Boil some chickpeas and potatoes to stuff in the Gole Guppay or use imli chutney and ygurt, if you don’t want the dish to be plain.
