kcalIt is multipurpose masala that will add to the taste of various dishes. Besides Dahi Baray, Aaloo chaat, fruit chaat, Chholay, pakorday etc, it can be sprincled over fried chicken, fried fish, haleem etc. to enhance their taste.
Ingredients
1.5 cup Cumin Seeds(Zeera)-roasted, finely ground
1.25 cup Red Chilies-roasted, finely ground
3/4 cup Coriander Seeds(Dhaniya), roasted, finely ground
1/2 cup Salt
1/4 cup Black Salt (Kala Namak)-powder
1.5 tsp. Black Pepper (Kali Mirch)-ground
1/2 tsp. Cloves (Laung)-ground
1/4 tsp. Black Cardamom Seeds (Bari Ilaichi)-ground
1/2 tsp. Carom Seeds (Ajwain)-ground
1/4 tsp. Asafetida (Heeng)-ground
2 tsp. Tartaric Acid-powder
3/4 cup Aamchur(Dry Mango) Powder
Directions
- Roast slightly the spices (cumin seeds, red chilies and coriander seeds) individually.
- Once cool, grind them into fine powder.
- Grind black pepper, cloves, black cardamom and carom seeds.
- Combine all ingredients in the given ration and mix well.
