kcalCharsi Chicken Karhai is a popular dish from a specific restaurant in Peshawar. Named after the founder of the restaurant, it’s cooked with very simple ingredients, its amazingly flavorful and very easy to make!
Ingredients
2 lb chicken, cut into small pieces
1 lb whole tomatoes
8 green chilis – cut in half
2 tsp salt
3/4 cup ghee
3/4 cup oil (I prefer avacado oil but any cooking oil works)
Directions
- In a wok or karhai, add the oil and ghee and heat it up on medium-high heat.
- Once the oil is hot, add the chicken in, stirring occasionally until it starts to brown up (about 10-15 minutes)
- Add the tomatoes in, whole, reduce heat to medium-low and cook covered for 10-15 minutes.
- At this point the tomatoes should soft.
- Carefully remove about half the oil/ghee.
- Mash the tomatoes to form a gravy, and add in the salt and chilis
- Increase heat and stir-fry until the oil separates out (about 5 minutes)
- Serve with hot naan
